If all your links point to the homepage then Google, or another search engine, will think that the homepage is the most important by far of your pages, and will usually only return that as a result. The creation of landing pages will help you achieve higher search results for a wider variety of search terms.

Search engines probably don't make assumptions about link validity based on the number of links pointing at a particular page. They use other factors to determine if the links pointing at your site are there because your site is interesting, or because you used a spam bot to plaster links all over the Internet. If you're using any kind of automatic link building software then odds are Google can see that already, but not because all your links point to the same homepage.
